An executive chef at Hilton Clark Sun Valley Resort is making waves not in the kitchen, but beneath the ocean's surface, with a captivating collection of underwater photographs. Nicholas Van Riemsdijk has launched "Secrets of the Sea," an exhibit featuring 19 stunning images captured in some of the world's most biodiverse marine sites, including Cebu, Batangas, and Raja Ampat. The display will be available for public viewing at the resort until May 31, offering a unique blend of art and environmental awareness.

From Diving Hobby to Artistic Showcase

With 36 years of diving experience, Riemsdijk only began underwater photography six years ago, transforming what he calls a "task-loaded hobby" into a full-fledged exhibition. He finds greater joy in capturing marine life than in diving itself, stating, "I love to challenge myself." His portfolio includes intricate shots of pygmy seahorses, elusive wobbegong sharks, and dynamic schools of bigeye trevally, all requiring immense technical skill and patience during dives.

Culinary Perspective Underwater

Even while exploring the depths, Riemsdijk's chef instincts remain active. "Sometimes I get hungry when I go on dives," he admitted. "I see coral reefs and start to think about recipes." This connection between the ocean and his profession has fostered a deep sense of responsibility. He emphasizes the critical need for sustainable seafood practices and reducing waste in the culinary industry, asserting, "We should be responsible for the marine life we eat."

Balancing Passion and Profession

When asked if he would ever choose between his kitchen duties and oceanic pursuits, Riemsdijk highlighted the balance he maintains. "I could never do it," he explained. "One would have to be work, and one would have to be a hobby. Right now, 'cheffing' is my work, and diving and photography are my hobby. Who knows? Maybe in the future that will switch, but I will always need both in my life."

Advice for Aspiring Underwater Photographers

For those inspired to take up underwater photography, Riemsdijk stresses the importance of foundational skills. "Learn to dive for quite a few years. Be very proficient before getting a camera," he advised. "It's a long path, but rewarding." This guidance underscores the dedication required to excel in both diving and photographic arts.
